I am about to apply for a UK Skilled Worker Visa from Italy. I need to provide criminal record documents corresponding to my time in Italy and another non-EU country I have lived for more than 12 months. Do these documents have to have an apostille? There is not a specific indication on the government websites.

As far as I can see, there is no apostille requirement. UK Home Office Caseworker guidance states that the certificate must be issued by the relevant authority. You can expect UKVI to check the validity of the certificate with the issuer.
